Curry Chicken with Chef Pascal Curry Lemon Grass Sauce
2 pieces boneless and skinless chicken breast |

Heat oil in nonstick skillet over medium high heat. Add chicken and brown approximately 1 minute each side. Add onion, red pepper, pineapple, sauté for 2 minutes. Add Chef Pascal Curry Lemon Grass Sauce and chicken stock. Simmer for approximately 10 minutes until chicken cooked through. Add salt and pepper to taste. Serve over rice and add chopped cilantro on top. |
