Balsamic, Tarragon & Roasted Garlic Sauce

Roasted Pepper with Garlic and Basil

1 yellow pepper
1 red pepper
2 cloves of garlic, chopped
4 leaves fresh basil, chopped
1 tablespoon extra virgin olive oil
Salt and pepper to taste

Char peppers in broiler until blackened on all sides. Enclose in a plastic bag and let stand 10 minutes. Peel and seed peppers, then cut into thin strips. In a mixing bowl, mix roasted pepper, garlic, olive oil and chopped basil. Add salt and pepper to taste. Refrigerate before serving. Serve with toasted bread or cracker. Roasted pepper can be used on a salad or you own creation.
